Four Cheese Ravioli with Sweetcorn and Basil Salsa and Parmesan
You don't have to go out to enjoy a special night with your special someone, date nights can be made easy with Ottimo pasta. Enjoy our ravioli pockets filled with a mouth-watering creamy mix of four cheese with Green Isle 's naturally sweet sweetcorn and this vibrant basil and chilli salsa, delicious topped with grated parmesan. Ready in minutes, this is perfect Friday night dinner for two!

Ingredients:
1 pack Ottimo Four Cheese Ravioli
150g sweetcorn
30g unsalted butter
1 green chilli, finely chopped
1 bunch spring onions, finely sliced
Large bunch basil, leaves picked
1 tbsp extra virgin olive oil
Sea salt & freshly ground pepper
Parmesan, to serve
Method:
1. Cook the Ottimo pasta in boiling, salted water for 4 minutes until cooked.
2. Drain, reserving some of the pasta cooking water.
3. Meanwhile, melt the butter in a saucepan and once foaming, add the sweetcorn. Cook for 4 -5 minutes until the sweetcorn starts to turn golden then add the garlic and green chilli. Cook for a minute or 2 then stir through the spring onions and basil. Add the pasta and toss to coat in the salsa then serve onto plates.
4. Drizzle over the extra virgin olive oil and grate over a little parmesan.
