Mushroom Ravioli with Creamy Blue Cheese

This recipe is perfect if you have lots of leftover cheese over the holidays and requires minimal effort to make when you fancy a quick, delicious dinner. Enjoy our mushroom filled ravioli with blue cheese and toasted walnuts in a creamy garlic sauce for a luxurious lunch or dinner.

Serves: 2

Total time: 20 minutes

Ingredients:

  • 1 pack Ottimo Mushroom Non-Quadratto Ravioli
  • 25g butter
  • 1 onion, thinly sliced
  • 1 garlic clove, crushed
  • A few thyme sprigs, leaves picked
  • 100ml cream
  • 100g blue cheese, cubed
  • 75g walnuts, toasted

Method:

1. Cook the Ottimo pasta in boiling, salted water for 4 minutes until cooked.

2. Meanwhile melt the butter in a large frying pan then gently fry the onion until golden. Add the garlic and thyme and fry for a further 2 minutes. Add the cream, bring to the boil then stir in the blue cheese and remove the pan from the heat. 

3. Drain the pasta and reserve some cooking water. 

4. Stir the pasta through the sauce then sprinkle with the toasted walnuts to serve.
